Why is steam heating so widely used in brewery applications?
It is well known that there are many kinds of heating methods for the brewing equipment, such as direct fire heating and electric heating and so on, but the steam heating method is by far the most applied method of imparting heat to brewing equipment. Because steam has the capacity to deliver a large of heat quickly to a point of use without the need for additional pumps. As a pound of steam condenses to water under a pressureof 15 psig, It can transfer 946 British thermal units of energy. This is the energy required to raise 5.25 pounds of liquid water from the freezing point to the boiling point, a rise of some 180°F, The flow of steam is relatively convenient to control, and it is one of the most efficient ways to transfer british thermal units cleanly which locked inside fossil fuels to the brewing progress. And it is more efficient than heating the brew kettle with direct fire. Additional benefit that the relatively lower temperature at which the transfer occurs causes less thermal stress on the wort and reduces the danger of scorching.
